Pare, core, and slice apples thickly. Soak them in water with lemon juice to retain fresh color. Line a deep 9 inch pie dish with your favorite pastry or one of the new mixes. Combine sugar, brown sugar, flour, nutmeg, and cinnamon. Add grated peels to the sugar mixture. Cover bottom of shell with sliced apples and sprinkle with a few chopped raisins, sultanas, and some sugar mixture. Repeat layers until pie shell is richly filled. Sprinkle with orange juice, dot with butter, and fit top crust. Cut slits in top to release steam. Decorate top with sugar and cinnamon.
